Creamy Cauliflower Enchiladas Recipe


It’s one of my favorite recipes! What’s so clever about it is that it uses the head of cauliflower in two ways. Put half in the enchilada and mix the other half in the creamy sauce.

You can also top these enchiladas with cheese if you like, but you can also skip that for a wonderful vegetarian version. No matter which option you choose, you’ll want to savor a few extra seconds. These enchiladas are so good! Endless aftertaste!

Sesame Heirloom Tomato Salad Recipe


This salad was made by me when I brought home my first heirloom tomatoes from the grocery store. Here, toasted seeds, creamy avocado, nutty sesame oil, and lime set off a layer of gorgeous, juicy tomatoes. It’s super simple to make, but that’s what a good tomato salad should be. It really jazzed up the tomatoes.

Broccoli Steak with Chickpeas Recipe


Impress the family at summer dinner parties with these gorgeous Charred Broccoli “steaks.” I make them gourmet with lemony couscous, roasted chickpeas, and a creamy chickpea romesco sauce to make them a hearty meal. It’s a new attempt, but a real hit! It looks like it’s burnt though, lol!
